 Golden Threadfin Bream with Fresh Tomato

Ingredients
300g golden threadfin bream
4 tomatoes
1 small onion
2 tbsp oil
ginger slices
Chinese spring onions
Marinade
1/2 tsp salt
Seasoning
2 tbsp Lea & Perrins Worcestershire Sauce
100ml stock
2 tbsp Heinz ketchup
3 tsp sugar
Preparation
- Marinate golden threadfin bream in 1/2 tsp of salt, cut onion into thin shreds
and tomatoes into pieces and set aside.
- Add oil into hot wok, lightly pan fry fish for 10 minutes until golden colour and set aside.
- Slightly cook onion, add stock, tomatoes, ketchup, sugar and ginger slices. Switch off heat and add Lea & Perrins.
- Pour the cooked sauce and sprinkle spring onions onto golden threadfin bream and serve.
